A more extravagant version of the basil corn pizza posted earlier. Add chopped walnuts (and/or pine nuts) to the basil mix and you’ve got pesto. The topping on this one is bacon, olives, diced sun-dried tomatoes and sliced mozzarella.

This was an end-of-the-month special that turned out great. And cheap! The herb pizza dough from Trader Joe’s is a dollar something. We knead them in a decent amount of flour until they’re not so sticky.

Pick a good bunch of basil leaves, chop them finely and mix with 1/4 cup of olive oil, 1/4 cup of parmesan and romano (we use the Trader Joe’s stuff) a crushed clove of garlic and just under a tablespoon of sugar.

Spread it on the base, add corn (one small cobs’ worth) and some muenster cheese. That’s it.

I love this pizza.
